Methods for brewing tea 沏茶方式

Brewing method varies based on the tea category. Brewing properly is the only way to bring out the aroma and taste of tea.

 

Water Temperature

That water at what temperature can be used for brewing mainly depends on the variety of tea. For delicate green, black, and yellow teas, 85-90°C is appropriate; oolong, white, black, scented teas, etc., 100 °C. Tightly pressed tea can be boiled to fully extract the active ingredients of tea leaves.

 

Ratio of Tea to Water

Tea-water ratio affects the aroma and taste of tea soup. The ratio for green, black, yellow and scented teas brewing is 1:50 or so; oolong tea, 1:20 or so. That for tea boiling is about 1:80. The proportion of tea-water also varies according to consumers' preferences.

 

Brewing Times

Times of tea brewing are relevant to the category of tea, water temperature, and tea-water ratio. Generally green tea, black tea, scented tea, etc. can be brewed three times. Oolong tea and black tea can be brewed and consumed several times.

泡茶水温 

水温的高低主要根据茶叶品种而定,如细嫩的绿茶、红茶、黄茶,以85-90°C为宜;鸟龙茶、白茶、黑茶、花茶等,宜用100°C的水来冲泡;紧压茶可用煮饮的方式,充分提取茶叶的有效成分。

 

茶水比例

茶水比例不同,茶汤香气的高低和滋味浓淡各异。冲泡绿茶、红茶、黄茶及花茶的茶水比例为1:50左右;乌龙茶的茶水比例为1:20左右;煮饮茶类的茶水比例为1:80左右,泡茶所用的茶水比例还依消费者的嗜好而异。

 

冲泡次数

茶叶的冲泡次数与茶叶种类、泡茶水温、茶水比例都有关系,一般绿茶、红茶、花茶等冲泡三次为宜,乌龙茶、黑茶等可多次冲泡品饮。
